Juicy, golden brown rotisserie chicken is an easy grab-and-go favorite for many. While rotisserie chicken tastes terrific as its own meal, it’s also delicious when incorporated into other dishes, making it an excellent leftover option. From enchiladas to tacos, here are five recipes you can make with rotisserie chicken.
1. Mini rotisserie chicken pot pies
These mini chicken pot pies are almost too cute to eat! First, sautée diced onions in a pan until they’re translucent. Next, add a bag of frozen peas and carrots followed by shredded rotisserie chicken, cream of chicken and water. Stir the ingredients together while sprinkling in some salt and pepper. Pour the pot pie mixture into ramekin dishes before placing a slice of biscuit dough on top. Cook the pies in the oven at 375 degrees Fahrenheit for 10 minutes and enjoy!
2. Rotisserie chicken enchiladas
Turn your leftover rotisserie chicken into hearty enchiladas. Begin by coating a baking dish with some enchilada sauce. Next, place a layer of cheese and shredded rotisserie chicken along with any other toppings on each tortilla. Once filled, roll the tortillas and place them, flap side down, on the baking sheet. After assembling the enchiladas, cover them with sour cream, followed by enchilada sauce and a generous amount of cheese. Cover the dish in tin foil, and cook for 25 minutes before broiling it without the foil for five minutes.
3. Rotisserie chicken sliders
This simple and tasty recipe is great for those days when it feels as if you’re racing against the clock. First, slice a sheet of dinner rolls in half. Next, add the shredded rotisserie chicken to a pan and thoroughly mix it with barbecue sauce. Place the barbecue chicken on the bottom halves of the rolls, then sprinkle on some chopped onions. Cover the onions and chicken with thin slices of cheese before finally adding the top halves of the rolls. Brush the bread with egg, and sprinkle on some herbs. Cover the sliders with tin foil, and place them in the oven for 15 to 20 minutes at 350 degrees Fahrenheit. Top them off with some parmesan cheese, and serve with corn on the cob.
4. Rotisserie chicken tacos
This recipe is so easy and delicious, it’s all you’ll want to “taco-bout!” To make these tacos, simply add shredded rotisserie chicken, feta cheese, salsa, lettuce, diced tomatoes and avocado into a hard or soft tortilla shell.
5. Rotisserie chicken spring rolls
You’ll like how this recipe rolls. Begin by removing the breast from the rotisserie chicken and slicing it into thin pieces. Next, dip your rice paper in water, then let it sit. Once the rice paper starts to soften, layer on your favorite vegetables along with vermicelli noodles, mint, a few mango slices and a slice of chicken. Tightly roll the rice paper, tucking in the sides halfway through before finishing. Serve these spring rolls with a delicious dipping sauce made from a mix of peanut butter, hoisin sauce and milk.
