Fried eggplant is a delicious and easy crunchy snack to whip up in a pinch, and it’s a great way to make use of eggplant’s versatility! On this episode of In The Know: Recipe Remix, TikTok-famous chef Shihan Chowdhury (@chilipeppercooks) shares how to make tasty fried eggplant slices to serve as either a flavorful snack or the perfect complimentary side dish!
Ingredients
- Eggplant
Batter Mix
- 1 cup chickpea flour
- 3 tbsp cornstarch
- 1.5 tsp baking powder
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp garam masala
- 1 tsp coriander
- 3 Thai chili peppers, diced
- 1 cup warm water
Post-seasoning Mix
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
Directions
- Cut your eggplant into rectangular slices.
- Make the batter by placing the chickpea flour, cornstarch, baking powder, onion powder, garlic powder, cumin, salt, garam masala, coriander, and Thai chili peppers in a bowl and mixing it all together.
- Slowly add warm water to the dry mix to form a batter with a semi-thick consistency.
- Coat your eggplant slices in the batter, and fry them in oil at 350 degrees Fahrenheit for 5-7 minutes, or until golden brown.
- Meanwhile, make the post-seasoning mix by mixing the salt, garlic powder and onion powder in a small bowl.
- Once the eggplant has cooked, remove it from the oil and add the post-seasoning mix right away while it’s hot. Plate, and enjoy!
